- Small pinch flaky sea salt
- Freshly cracked black pepper, optional
- Crackers, sliced baguette, apple slices, or pear slices, for serving

How to Make Perfectly Baked Brie with Jam

Heat oven to 350°F and give it time to come fully to temperature before brie goes in. This is one of those tiny decisions that matters more than it seems!
Putting cheese into a half-heated oven means rind sits around warming slowly while center catches up, which can make timing unpredictable.
Line a small baking sheet with parchment paper, or use a small oven-safe serving dish if you have one. A shallow brie baker is lovely, but absolutely not necessary.
Take brie from refrigerator and remove every bit of packaging. Do not cut off rind. Place whole wheel in center of prepared baking sheet or dish.
You can very lightly score only top rind with a small knife if you want jam to mingle with cheese a little more, but do not cut deeply and do not slice around sides.
I usually make a few extremely shallow crisscross marks across top, no more than about 1/8 inch deep. You are giving jam somewhere to settle, not performing cheese surgery!
Spoon 1/3 cup raspberry preserves onto center and spread it gently across most of top, stopping roughly 1/4 inch from edge. Don’t skip that little border!
Jam becomes thinner once hot, and leaving some room near rind helps prevent it from immediately spilling down sides. Scatter chopped walnuts evenly across jam, then drizzle honey over everything.
Sprinkle fresh thyme leaves over top and finish with a very small pinch of flaky salt. If you enjoy a sweet-savory contrast, add two or three turns of freshly cracked black pepper as well.
Place brie on center rack and bake for 12 minutes, then check it instead of blindly following a timer. Oven personalities vary, and brie is too good to sacrifice to stubborn timing!
Gently press side or center with back of a spoon. Rind should still look intact, but cheese beneath it should feel noticeably soft and almost jiggly. Jam will look shinier, walnuts will smell toasted, and edges of wheel may appear slightly puffed.
If center still feels fairly firm after 12 minutes, return it to oven for 2 to 3 more minutes. An 8-ounce wheel usually needs 12 to 15 minutes total at 350°F when starting cold from refrigerator.
Resist temptation to keep baking until cheese visibly bursts open. That is usually a sign you have gone a little too far. Goal is molten cheese waiting inside intact rind, not a dairy lava flow across parchment!
Remove brie from oven once center feels very soft under gentle pressure. Let it stand for 3 to 5 minutes before moving or cutting into it. I know waiting beside a bubbling wheel of cheese feels deeply unfair, but this little rest is worthwhile!!
Straight from oven, melted brie can be extremely runny and hot. After a few minutes it remains luscious and scoopable while gaining just enough body to stay on crackers instead of racing down your hand.
Transfer brie carefully to a serving plate if you baked it on parchment. Slide a wide spatula beneath wheel and support it well because warm brie is much softer than it looks.
Add a couple of fresh thyme sprigs around plate if you like, place crackers, baguette slices, apples, or pears nearby, then cut a small opening through rind at table.
That first spoonful should reveal warm, creamy cheese slowly flowing into glossy raspberry jam. At that point you may want to abandon serving etiquette and simply protect your share!
How Do You Know When Baked Brie Is Perfectly Done?
Look for softness rather than browning. Brie does not need to become golden on top. It is ready when:
- Center feels soft when gently pressed.
- Wheel gives slightly when nudged but still holds its round shape.
- Jam looks hot, loose, and glossy.
- Nuts smell lightly toasted.
- Rind remains mostly intact.
- Cheese flows slowly when opened rather than pouring out like liquid.
- If you cut into brie and center remains firm, simply return it to oven for another 2 to 3 minutes.
- If cheese immediately runs everywhere, it was probably baked a little too long. It will still taste wonderful, so this is hardly a culinary emergency, but next time start checking a few minutes earlier.

Serve baked brie while it is warm enough to remain creamy but not scorching hot.
I like placing brie in center of a large board or platter and arranging different dippers around it so guests can choose their favorite combination.
