  • Cooked ham – 2½ to 3 cups, diced. (Use leftover ham, spiral ham, or thick-cut deli ham if you must—but leftover wins.)
  • Chicken broth or stock – 8 cups
  • Water – 2 cups
  • Bay leaves – 2
  • Fresh thyme – 6 sprigs (or 1½ tsp dried thyme)
  • Black pepper – 1 tsp
  • Smoked paprika – ½ tsp

The Cozy Fillers

  • Yukon Gold potatoes – 4 medium, peeled and diced into ¾-inch cubes. (Yukons stay creamy and don’t fall apart like they’re auditioning for mashed potatoes.)
  • Optional: White beans or cannellini beans – 1 can (15 oz), drained and rinsed. (Adds body and protein. Makes the soup feel like a full meal.)

  • Salt – only as needed at the end. (Ham varies wildly in saltiness. Taste first, then decide.)

The “Soup That Makes People Linger” Method

Step 1: If You Have A Ham Bone, Build The Broth First

This step is why the soup tastes like it has depth and history.

Add ham bone to a large pot with:

  • 8 cups broth
  • 2 cups water
  • Bay leaves
  • Thyme
  • Black pepper
  • Smoked paprika

Bring to a gentle boil, then reduce to a steady simmer.

  • Simmer uncovered for 35–45 minutes.
  • What you’re doing: pulling smoky, salty goodness into the broth before anything else goes in.
  • Remove the bone.
  • Pick off any meat clinging to it, chop it, and reserve it.
  • Discard bay leaves and thyme stems.
  • If you don’t have a bone, don’t panic. You’ll still get an incredible soup. We build flavor a different way.

Step 2: Build The Flavor Base In The Soup Pot

  • In a Dutch oven over medium heat, add olive oil and butter.
  • Add diced onion, carrots, and celery with a pinch of salt.
  • Cook 10–12 minutes, stirring occasionally, until the vegetables soften and start to turn lightly golden.
  • This is where the soup starts smelling like you know what you’re doing.
  • Add garlic and cook 30 seconds, just until fragrant.
  • Add tomato paste and stir it into the vegetables. Cook 1–2 minutes until it darkens slightly.
  • That tiny bit of browning makes the soup taste deeper, not tomato-y.

Step 3: Make A Quick Roux For A Creamy, Silky Broth

  • Sprinkle flour over the vegetables.
  • Stir constantly for 1–2 minutes.
  • You’re cooking out the raw flour taste and building a thickener that turns broth into velvet.

Step 4: Add Broth Slowly So It Stays Smooth

  • Pour in about 1 cup of broth first, stirring to loosen everything.
  • Once smooth, add the remaining broth gradually.
  • If you made the ham bone broth, use that. If not, use fresh broth and water.
  • Bring to a gentle simmer.

Step 5: Add Potatoes (And Beans If Using)

  • Add diced potatoes and stir well.
  • Simmer 15–18 minutes, until potatoes are tender when pierced with a fork.

Important: keep the simmer gentle. A violent boil breaks potatoes down too fast and turns them grainy.

If using beans, add them during the last 5 minutes of potato cooking so they warm through without turning mushy.

Step 6: Add The Ham At The Right Time

  • Ham is already cooked, so don’t punish it with an extra hour in boiling liquid.
  • Add diced ham (and any meat from the bone).
  • Simmer 8–10 minutes until warmed through.
  • This keeps the ham tender instead of tough and chewy.

Step 7: Thicken The Soup Like A Pro (Two Options)

You choose your texture.

Option A: The Classic Creamy Finish

  • Reduce heat to low.
  • Stir in heavy cream.
  • Let it warm 2–3 minutes. Do not boil after adding cream.

Option B: The “Naturally Thick” Potato Trick

  • If you want thicker soup without extra cream:
  • Use a potato masher to mash a small portion of potatoes right in the pot—about 6–8 gentle presses.
  • Stir.
  • This thickens the soup naturally and keeps it hearty.
  • You can still add cream after this if you want the full cozy effect. And you do.

Step 8: Finish With Brightness And Herbs

This is where soup goes from “good” to “wow.”

  • Stir in parsley.
  • Add lemon juice or vinegar, starting with 1 tsp.
  • Taste.
  • If it tastes a little flat, add the second teaspoon of acid. This wakes up the ham and makes the broth taste more alive.
  • Only now, adjust salt if needed.
