Tap each egg gently all over and peel under a thin stream of cool running water if shells are being stubborn. Older eggs usually peel more easily than eggs that just came home from store.
Slice eggs lengthwise and carefully remove yolks.
Mash yolks very thoroughly with a fork before adding wet ingredients. This matters because once yogurt goes in, stubborn little yolk lumps become much harder to chase down.
Add Greek yogurt, mayonnaise, Dijon, vinegar, garlic powder, smoked paprika, salt, and several grinds of black pepper.
Stir until filling looks creamy and smooth. Taste it. If flavor seems flat, add another tiny splash of vinegar or pinch of salt rather than automatically adding more mustard.
Spoon filling into egg whites, or transfer it to a zip-top bag, snip one corner, and pipe it in.

Spread edamame across baking sheet in one layer. Use a large pan rather than squeezing everything into a smaller one because space between beans encourages roasting instead of steaming.
Bake for 15 minutes, stir thoroughly, then return pan to oven for another 10 to 17 minutes.
Start watching closely around 25-minute mark. You are looking for wrinkled surfaces, browned Parmesan bits, and darker golden patches around edges.
Remove pan from oven and immediately add lemon zest. Let edamame cool on baking sheet for about 5 minutes because it firms slightly as steam escapes.
Taste and add another pinch of salt only if needed. Parmesan can vary a lot in saltiness, which is why I prefer seasoning conservatively before roasting and adjusting afterward.
