  • 1/4 teaspoon black pepper
  • Juice of 1 lime

How to Make It

Place chicken in your slow cooker, then add cannellini beans, corn, green chiles, onion, and garlic. Pour in chicken broth and sprinkle cumin, oregano, smoked paprika, salt, and pepper over top.

Press some beans down into broth, but do not worry if a few remain above liquid because chicken and vegetables will release more moisture as they cook.

Cover and cook on LOW for about 3 1/2 to 4 hours or HIGH for 2 1/2 to 3 hours, checking chicken for 165°F before shredding.

Transfer chicken to a plate. Before you put it back, take a potato masher or large fork and lightly mash about one-quarter of beans directly inside slow cooker. Don’t mash all of them!

You want enough broken beans to thicken broth while still keeping plenty whole for texture.

  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lime juice

How to Make It

Rinse red lentils under cool running water until water looks mostly clear, then add them to slow cooker.

Place chicken breasts over lentils and pour coconut milk, tomatoes, and chicken broth around chicken. Add onion, garlic, curry powder, cumin, paprika, turmeric, salt, and pepper.

Give liquid and lentils a gentle stir around chicken so spices are not sitting in one dry mound on top. You do not need to completely submerge chicken because it will release liquid while cooking, but lentils should be mostly covered so they can soften evenly.

Cover and cook on LOW for 3 1/2 to 4 hours or HIGH for approximately 2 1/2 to 3 hours.

Check chicken first, remove it once it reaches 165°F, and then inspect lentils. They should be soft enough to press easily against side of your slow cooker with a spoon.

If chicken is done but lentils need another 15 minutes, keep chicken covered on a plate and let sauce continue cooking without it. This is exactly the kind of tiny kitchen decision worth making instead of sacrificing juicy chicken because lentils decided they needed extra time!

Cut or shred chicken, stir sauce vigorously until coconut milk and softened lentils combine into a thick, creamy consistency, then return chicken. Add lime juice, taste, and adjust salt.

If sauce becomes thicker than you like, stir in warm chicken broth a few tablespoons at a time. Red lentils keep absorbing moisture as they sit, so save a little broth if you plan to refrigerate leftovers.

How to Make It

Place chicken breasts in slow cooker, then add cannellini beans, mushrooms, bell peppers, onion, and garlic around them. Pour crushed tomatoes over everything, add tomato paste, Italian seasoning, paprika, salt, pepper, and red pepper flakes if you want a little heat.

Use your spoon to gently move tomato mixture around so tomato paste is not left in one solid lump, but you do not need to stir so much that chicken disappears underneath everything. Vegetables will shrink considerably as they cook.

Cover and cook on LOW for 3 1/2 to 4 hours or HIGH for 2 1/2 to 3 hours, checking thickest part of chicken for 165°F. Mushrooms and peppers should be soft but still recognizable rather than completely dissolved into sauce.

Remove chicken and slice it into thick pieces. Stir balsamic vinegar through tomato mixture and taste it before making any other adjustments.

Tomatoes vary quite a bit in acidity, and balsamic vinegar adds both brightness and a tiny touch of sweetness, so give sauce a proper taste before reaching for sugar.

Return sliced chicken to sauce and spoon tomato mixture over it. Let it sit for about 5 minutes on WARM so those cut surfaces soak up some tomato and herb flavor.

Serving Suggestions

Serve it over pasta, creamy polenta, mashed potatoes, or brown rice, making sure plenty of tomato sauce and cannellini beans make it onto every plate.
